Hidden Oreo Cupcakes

These cupcakes are a decadent, easy to make, treat, perfect for the sweet tooth out there and baked with a surprise.

Here’s what you will need:

Cupcakes

  • 3/4 cup butter
  • 2/3 cup sugar
  • 3 eggs
  • 1/4 cup cocoa powder
  • 1/2 cup self-raising flour
  • 1 tsp baking powder
  • 10 Oreos (or 1 per cupcake), any flavour*

Makes 10 cupcakes (can double recipe, including icing, if more are needed)

*I usually like to mix the Oreos, making half regular and half mint

Icing

  • 7 Oreos (or however many you see fit)
  • 1/4 cup butter, softened
  • 1/2 package cream cheese (125 grams), softened
  • 1 cup icing sugar
  • 1/2 tsp vanilla extract

 

Here’s what you do:

Cupcakes

  • Preheat oven to 350°F and line muffin trays
  • Beat sugar and butter together
  • Add in eggs, mixing together
  • Gradually stir in flour, baking powder, and cocoa powder until blended; use beater to get rid of any remaining chunks
  • Spoon in a little of the batter into each cupcake holder, spreading to the edges; then place 1 full Oreo in each, squishing down slightly; spoon in rest of batter, filling to the top
  • Bake in oven for 10-15 minutes, or until an inserted toothpick comes out clean (note that the Oreo will leave residue on the toothpick no matter how long cupcakes are baked for, so insert toothpick until you feel the Oreo, then stop)

Icing

  • While cupcakes are cooling, cream together butter, cream cheese, icing sugar, and vanilla extract until smooth. You may do this by hand or with blender/Cuisinart
  • Crush Oreos (I do this by putting them in a little baggy and crushing them by hand) and mix crumbs into icing
  • Once cupcakes have completely cooled, begin icing them
  • As added decoration, you can push half an Oreo onto the top of each cupcake*

*When using two different kinds of Oreos, I like to alternate them, meaning the cupcakes that have a regular Oreo inside will get a mint Oreo on top and vice versa

Voila! You now have a sweet treat with a soft, gooey surprise hidden inside for all to enjoy!
